Ingredients for puran(filling):
1 Chana Dal 250 gram
2 1 small bowl of sugar (or jaggery, as per taste)
3 1/2 tsp cardamom powder
4 A pinch of nutmeg powder (optional)
5 2 tbsp ghee
Ingredients for poli(Dough)
1 3 bowl wheat flour
2 1/2 tsp salt
3 2 tbsp oil or ghee
4 water as needed

Cook The Chana Dal
1 Wash the chana dal thoroughly and pressure cook it till it becomes soft. Till 5 to 6 whistles.
2 Cover the pressure cooker and leave it. Let it cook on medium flame.
Prepare The Dough
1 Take three small bowls of flour in a large plate and add salt and 1tsbs oil and mix well. You can also add a pinch of turmeric powder if you want, but it is (optional). This gives a nice color to the roti.
2 Now add water to the flour slowly and knead it into a soft, smooth dough.
3 Cover the dough with a wet cloth. It should rest for at least 1 to 2 hours. This will make the dough very soft, which will make it very easy to make poli.
Stuffing: prepare the puran
1 After the air is released from the cooker, open the lid and press it with your fingers to see if the lentils have become soft or not. After the lentils are cooked properly, let them cool down for some time so that we can blend them easily on a sieve.
2 Now put the lentils on a sieve and rub it with a strong spoon and make a smooth paste of all the lentils. If you want, you can also blend it in a mixer. But I have used a sieve here.
3 Now put the lentils in a pan and add a big spoon of ghee and sugar to it. So that the lentils do not stick to the bottom and also get cooked well. But keep in mind that the lentils should be roasted while stirring.
Here I am using sugar instead of jaggery because I do not like to eat jaggery, you can use jaggery in this.
4 Cook the mixture until it thickens.
5 If the mixture is sticking to the bottom, add one more teaspoon of ghee. And add cardamom powder to it. You can also add nutmeg powder to it, but this is (optional). Mix well and when it thickens, turn off the gas and let the dal cool down. On cooling, the dal thickens even more.
6 Here I have blended cardamom with little sugar, so it looks like white powder.
Now the Puran is ready, you can put it inside the Poli and make Puran Poli.
Assemble the puran–poli Divide the flour and Puran mixture into equal-sized balls.
Now take a ball of dough and roll them into small round shapes, place the filling in the center and fold the dough around the filling to seal the edges.
Place it on the rolling board, sprinkle some flour on it and slowly roll it into a thin round shape.
Roll it slowly as big as you can, but be careful that the covering does not tear. Here I have tied a cotton cloth on the rolling board, this prevents the covering from tearing and makes it easier to make rotis. Do not make the roti too thick or too thin.
Cook The Poli
1 Heat a pan on medium flame. When the pan is hot, put the puran poli on it, and cook it on both sides.
After cooking the puran poli on both sides, pour ghee over it and cook until it is cooked evenly including the edges.
Press with a spatula so that it puffs up completely.
Take it out on a serving plate. Apply ghee on the Puran-poli and then place them one above the other.
