Ingredients Needed

Paneer Do Pyaza

1: Paneer 200g (Indian Cottage cheese): Cut into Cubes.
2: 2 large-size onions sliced into thin strips.
3: 2 Tomatoes chopped finely.
4: 2 Green chilli chopped finely (optional for heat)
5: 1 tbsp Ginger crushed
6: 8-10 Garlic cloves crushed
7: 75 Ml curd
8: 1 cube better
9: spices: Red chili powder, coriander powder, turmeric powder, garam masala.
10: 1 tbsp cumin seeds
11: 1 Bay leaf
12: 2 cardamom
13: 2 whole red chilli
14: Black pepper
15: 2 cloves
16: 1 tbsp Fenugreek leaves crushed
17: 2 tbsp Fresh Cream(optional, for richer texture).
18: salt to taste.
19: Oil/Ghee for cooking.
20: Fresh coriander leaves: chopped for garnish.

Step by Step Instructions

Preparation steps

Step 1 Frying paneer: heat oil in a pan over medium heat.

Add 1/2 tbsp and let the cumin seeds crackle.

Paneer Do Pyaza

Add paneer cubes and fry them until they turn golden brown on all sides. and add 1 pinch of turmeric powder.

We will mix it well. Now the name is Paneer Do Pyaza, you must read two types of onions. One big size onion which I have cut into big pieces here, add two red chilies, and fry for 2 minutes.

A little salt will keep the paneer from tasting bland.

Just fry it lightly, do not crunch it too much, just take 2 minutes and our Paneer Do Pyaza is ready.

Step–2 Curd grevy: Here I have taken half a cup of fresh beaten curd which is used in most of the dhaba vegetables, be it paneer masala or paneer do payaza, this gives branding, thickness, creaminess, and taste to the gravy and the flavor gets enhanced immensely.

Also, we will add some spices here, 1 tbsp coriander powder, 1 pinch turmeric powder, 1/2 tbsp fennel seed powder, 1 tbsp Kashmiri red chilli powder, half tbsp cumin powder, half tbsp garam masala powder. Mix all the things well.

Now the paste we have prepared has two advantages, one is that the curd will not curdle and secondly, the spices will not burn when you add it to the vegetable and the gravy will have a perfect consistency.

Making the gravy: Heat 1 tbsp oil and 1 tbsp ghee in a pan. Add one teaspoon of cumin seeds, bay leaves, 2 cardamoms, and 5 black chilies, and let them crackle.

Now add finely chopped onions and fry them till they become golden brown.

Add grated ginger-garlic and green chilies and cook till the raw smell goes away.

Roast for 1 minute

Now we will add half a teaspoon of turmeric powder, and one teaspoon of Kashmiri red chili powder and mix it. To ensure that the masala does not burn, we will add two tablespoons of hot water here.

Add water and fry it well for 1 minute.

Here we will add the tomatoes which we had chopped finely. We do not want to make a paste because the finely chopped tomatoes are the pride of paneer and onions. We will mix it well and turn off the flame.

Tomatoes have to be cooked very well, there should not be even a little rawness left. Because if the tomato tastes raw, then the vegetable will not be good. Therefore, cook the tomatoes well and add a spoonful of salt along with it so that the tomatoes get cooked well.

Here we have to put the heat on for 2 minutes so that the tomatoes get cooked well and release oil.

See, all the things have been cooked well, now at this stage turn down the flame and pour all the spice paste that we had prepared in curd here.

Keep stirring it without stopping, the curd will not curdle as there are spices added to the curd, mix it well and cook it well for 2 minutes.

Also, the oil will separate from the whole masala.

Here we will add water. How thick or thin you want the gravy to be, add water as per your requirement but the water should be hot, this gives a good taste to the vegetable.

We will mix it well, by adding water the consistency of the gravy will become perfect and whatever we have added will become very soft.

Place the lead here and let it cook on a medium flame for two to three minutes.

Now at this stage, we will add our prepared paneer do pyaza here, and mix it well. If you feel that the gravy is too thick, then you can add some hot water. Boil it once.

Here I am adding one spoon of fenugreek leaves, this makes the taste of the vegetable amazing.

If there is cream here, then beat the cream or milk cream and add two spoons. Mix everything well and turn off the flame.

Now we will put the lid on and cook for 2 to 3 minutes more so that all the ingredients we have added get cooked well and their flavor gets transferred to our vegetable.

And here, our Paneer Do Pyaza is ready.
