Ingredients

1 1/2 kg potatoes (boiled and mashed)
2 2 cup of milk
3 1/2 cup of sugar (to taste)
4 1/4 tsp cardamom powder (or cinnamon powder for a different flavor)
5 2 tbsp ghee
6 A handful of nut (like almonds, cashews of pistachios)and raisins (optional)
7 A pinch of salt to balance the sweetness

Step:1 Prepare the potato

Boil the potatoes until soft.

Once cooked, peel them and mash thoroughly to show there are no lumps. The smoother the potatoes the creamier your pudding will be.

Step: 2 Cook the pudding base

1: In a pan, heat ghee on medium heat.

2: Now add the mashed potatoes and fry them for 10 to 15 minutes while stirring continuously. Here the pudding has to be fried till the potatoes absorb the ghee. Its color and texture changes.

You can see its texture, after cooking small bubbles start appearing in the potatoes. After frying well, the quantity of potatoes also starts to seem less.

After the potatoes are cooked, fragrance starts coming from them and the rawness of the potatoes also goes away.

Step: 3 Add Milk and Sugar

Now we will add it here, I have taken 100 grams of sugar here. You can increase or decrease the sugar as per your taste. And we will mix it well while stirring. After adding sugar it will become a little thin.

To enhance its color and flavor, you can use food color or saffron milk. It is completely optional. You can add it if you want, otherwise you can prepare the halwa without it.

To make the halwa tasty and creamy, add milk cream slowly. Keep stirring continuously. This will prevent lumps from forming when the milk is mixed well with the potatoes and then cook it till it thickens.

Step 4 Cook Until Thickened

Continue cooking the mixture over low heat, stirring occasionally, until it reaches the consistency you like. It should be thick but not too much.

Step 5 Add Spices and Nuts

Add cardamom powder. This will add warmth and a lovely aroma to the halwa. If you like extra texture, add finely chopped dry fruits like cashews, almonds etc at this stage.
